From being one of the designated meat grinder for the Igado dish (Mano-mano lang ang pag-giling sa baboy kasi wala kaming panggiling), this year, I preped the “star” dishes, meaning I get to clean the goat intestines for the Pinapaitan, chop the goat meat for the Kaldereta and slice the pork fat for the Minatamisan.
